Buffalo Bites

Ingredients:

1 pkg mini bell peppers

1 8 oz pkg cream cheese

½ cup blue cheese or ranch dressing

½ cup sour cream

½ cup hot sauce

2 T butter

2 tsp garlic (minced)

¼ cup finely chopped onion

½ cup shredded cheese (sharp white cheddar or Colby)

½ cup mozzarella

2 cups shredded or chopped rotisserie chicken or chopped shrimp

2 tsp old bay seasoning

 

Directions:

Preheat oven to 375. Rinse and half the bell peppers and place them on a parchment line baking sheet. Shred a rotisserie chicken and chicken and set aside.  In a sauté pan melt the butter and add the onions and caramelize.  Add the garlic and sauté until fragrant. (Do not brown garlic).  Add the softened cream cheese, chicken, and hot sauce.  Allow cream cheese to melt and for mixture to reduce.  Remove from heat and allow to cool slightly.  In a medium bowl add the sour cream and dressing and combine it with the chicken mixture.   Fill the peppers and top each pepper with the shredded cheese.  Bake in oven until bubbly and cheese is melted.

 

*Shrimp version*

Follow the original instructions.  Remember to rinse, peel and devein shrimp.  Add to caramelized onions when adding garlic.  Season with old bay.  Remove from heat when slightly pink and set aside. In the same sauté pan proceed with remaining instructions to melt cream cheese and flavor with hot sauce.  Combine all ingredients in a bowl, fill the peppers and top with cheese.  Bake in oven until bubbly and cheese is melted.
