BBQ Salmon Bowl

Ingredients

2 salmon filets

2 T avocado oil

½ tsp cumin

½ tsp paprika

Salt and pepper

½ c BBQ sauce

 

Directions

Prepare fish and pat dry.  Mix seasonings in bowl and sprinkle on both sides of fish.  Preheat the oven to 300 degrees, heat the skillet with the oil and sear the fish on all sides for 2 mins. per side on med-hi heat. Place fish in baking pan skin side down and baste with BBQ sauce.  Cook for 10-15 mins. Remove and baste again before serving.

 

The Bowl

1 c corn

1 c riced broccoli

½ onion (diced)

½ c bell pepper (diced)

½ zucchini (diced)

1 jalapeno (diced)

1 T avocado oil

 Directions:

Heat skillet with oil.  Add onion, peppers, and corn.  Cook for 2-3 minutes, then add in zucchini for 2 minutes.  Prepare the riced broccoli. 

In your bowl place your broccoli, and in your remaining vegetables and top with the salmon and bbq sauce.
