Oven-Fried Chicken

Ingredients

4 chicken thighs

1 c protein powder (flavorless)

1 egg

2 T hot sauce

2 T milk

1 tsp garlic powder

¾ tsp salt

1 tsp paprika

1 ¾- 2 c pork rinds (ground)

1/3 c oil

Sauce

½ c honey

2 T soy sauce

1 T hot sauce

2 T vinegar

1 T garlic (minced)

2 tsp cornstarch

1 tsp water

 

Directions: 

Preheat oven to 390 degrees. Clean chicken and pat dry. You will use the 3-step dipping process.  In the first bowl add the protein powder with some salt, and cayenne pepper.  In the second bowl add egg with a tsp of water, hot sauce, and milk mix to combine.  In the third bowl add the ground pork rinds, garlic powder, salt, and paprika.  Dip the chicken in the powder, shake off the excess, then dip in the egg mix and then the pork rinds.  For extra crispy return the chicken back to the egg and then in the pork rinds a second time.  Repeat for the remaining pieces and place them in a foil line pan.  Bake 25 mins, turn each piece and back for an additional 20 minutes (internal temperature 160-165).

For the sauce

Add first five ingredients to a small saucepan over medium hi heat.  Create a slurry with cornstarch and water.  Add to saucepan, bring to boil, then reduce to simmer.

Pour over the chicken when ready to serve or use as dipping sauce.
