Chicken and Mushroom Soup

Ingredients:

2 T olive oil

1 cup celery (diced)

2 cup carrots (diced)

1 onion (diced)

1 cup sliced mushrooms

2T minced garlic

8 cups vegetable broth

2 cups diced chicken

1 T chopped thyme (fresh) (1-1/2 tsp dried)

Salt and Pepper to taste

Directions:

Heat oil on medium heat, add carrots, celery, onions and mushrooms.  Saute for 10 mins, then add garlic.  Do not overcook garlic.  Add thyme and stock and bring to a simmer.  Add in diced chicken and seasonings.  Enjoy!
