Cauliflower Chowder

Ingredients:

4 strips chopped bacon (turkey or bacon)

1 stalk celery

2 T minced garlic

5 cups chopped or riced cauliflower

2 T water

1 tsp onion powder

2 cups milk

1-2 cups vegetable or chicken broth

1 T hot sauce (to taste)

2 T protein powder or flour (arrowroot or cornstarch)

2 cups shredded sharp cheese

1 tsp paprika

Salt and Pepper to taste

Directions:

Cook bacon until crispy, remove from pan, and allow to drain. Sauté celery and garlic, 3-4 minutes.  Add cauliflower, water, onion powder, cook for 5 minutes.  Add the milk, half the broth, and hot sauce and bring to boil.  Use an immersion or regular blender to smooth texture.  Whisk remaining broth and protein powder, drizzle into chowder, and add cheese.  Add seasonings to taste.
