Zuppa Tuscana

Ingredients:

4 slices bacon chopped

2T minced garlic

4 cups vegetable or chicken broth

1 lb. spicy Italian sausage

½ onion (diced)

2 turnips (sliced)

3 cups water

1 tsp pepper flakes

4 cups mustard or collard greens (chopped)

1 cup heavy whipping cream

Parmesan cheese

Salt and Pepper to taste

Directions:

Brown sausage, remove and set aside.  Cook bacon until crispy, stir in onion until soft.  Add in minced garlic.  Do not brown garlic.  Add broth and water with seasonings.  Add in turnips and bring to simmer until tender (10 mins).  Add the greens, simmer for 10-15 mins.  Stir occasionally.  Stir in the heavy cream and heat through.  Serve with parmesan as garnish.
