Asian Beef Noodle (Ramen)
Ingredients:
2 T oil
2 lbs. cubed beef
2 onions (large chunks)
4T minced garlic
4 cups beef broth
6 cups water
¼ cup soy sauce
1 inch peeled ginger
4 star anise
12 oz noodles
1 head bok choy
Siracha, hoisin, and/or basil
Salt and Pepper to taste
Directions:
Season meat with salt and pepper. Set Instapot to sauté, heat oil and sear meat on all sides until brown. Add stock, water, soy sauce, ginger, star anise, garlic, onions, and meat. Change settings to high pressure for 30 mins. Prepare the noodles and drain. Release the steam and check the meat for tenderness. Remove the star anise, ginger and onion. Add the bok choy and simmer/saute for 10 minutes. Season and ladle in bowls filled with noodles. Top with the garnishes you like.
